VegGIES in Soy sauce & rice

Veggies or Vegetables in soy sauce is a dish with a variety of different vegetable like Bell Peppers (red, green, orange, yellow or a mix of any or all), carrots, green beans (french beans) - fresh or frozen, green peas - fresh or frozen, potatoes cooked together in a soy sauce, chilli sauce and tomato sauce.


Before serving this dish, grease a pan and then spread the cabbage leaves (like used in sizzlers) in it and let it cook a bit on medium flame. Once they starts turning brown pour cooked vegetables in it. The cabbage leaves tastes so good when cooked this way.


My husband and I once wanted to cook vegetables in a bit different way, so we tried this dish and liked it so much that it is one of our special dishes that we used to cook on special occasions.


It goes very well with rice - plain or steamed rice.


In its multiple stage preparation, the first stage requires boiling of chopped vegetables and then sauté them in different sauces. Then spreading and cooking of cabbage leaves in a pan and then pouring of cooked vegetables over cooked cabbage leaves. Then finally adding and spreading evenly melted butter over the vegetables. This is optional if you don't want to use so much of butter or oil.


Plain rice refers to rice that has been cooked either by steaming or boiling. You may cook plain rice with or without salt, depends on your taste.


The terms steamed rice or boiled rice are also commonly used for plain rice. Any variant of Asian rice (both Indica and Japonica varieties), African rice or wild rice, glutinous or non-glutinous, long-, medium-, or short-grain, of any colour, can be used. Rice for cooking can be whole grain or milled.


Plain rice is very simple to cook and takes not too much time. You don't need to have a rice cooker to make plain rice. You can use a saucepan or a pressure cooker.


In India rice is cooked daily in main meals in many families. Plain rice goes well with any gravy dish.


Veggies in soy sauce and rice makes a perfect combination and is very delicious in taste.

Ingredients

  • Bell Peppers (red, orange, green or yellow) - 3
  • Carrots (chopped) - 2
  • Green Beans (fresh/frozen) (cut into 1") - 1 cup
  • Green Peas (fresh/frozen) - 1/3 cup
  • Potato (cut into cubes) - 1 large
  • Green Chillies (finely chopped) - 2
  • Onion - 1 medium
  • Soy sauce - 1 tbsp
  • Chilli Sauce - 2 tbsp
  • Tomato ketchup - 2 tbsp
  • Oil - 1-2 tbsp
  • Butter - 1 tbsp (optional)
  • Water (to boil vegetables) - as required
  • Salt to taste


For Plain Rice

  • Rice - 1 cups
  • Water - 1.75 cups
  • Butter or oil - 1 tsp (optional)
  • Salt to taste

Preparation

For Veggies in Soy Sauce


  • Wash all the vegetables like bell peppers, carrots, potatoes and beans properly.


  • Cut bell peppers into two pieces and remove all the seeds and then cut into squares (medium size pieces). Cut potatoes into cubes, you may peel the skin of the potatoes or can use potatoes with skin.


  • Also cut carrots into cubes or rectangles. Here also you may use carrots with or without skin as per your taste. Chop green beans into 1" pieces.


  • Remove the skin of the onions, cut it into half. Then cut each half into 3 pieces and separate the onion layers. Keep it aside for later use.


  • Take out a leaf of cabbage and cut it into 2 pieces. Ready 10-12 such pieces of cabbage and keep it aside for later use.


  • Take a saucepan  and add water in it, to boil all the vegetables together. Add 1/2 tsp of salt and chopped vegetables into it. Let them boil on a high flame. When water starts to boil, reduce the flame to medium.


  • Boil it till the vegetables specially potatoes and carrots gets almost cooked. You can check by inserting a fork or a knife into the potatoes and carrots to check whether they gets cooked or not.


  • Once done remove the pan from the flame, pour out the water and keep aside for later use.


  • Now add oil in a pan or a kadai. When it gets hot, add finely chopped green chillies into it. Sauté it for a minute. Stir in between.


  • Then add already chopped onions into it and sauté till it gets translucent. Stir occasionally.


  • Now add soy sauce, chilli sauce and tomato ketchup and mix well.


  • Then add salt, while adding salt keep in mind that you already put some salt while boiling the vegetables and soy sauce also contains salt. So add accordingly. Mix well.


  • Now add already boiled vegetables into it and mix well. Add 1/3 cup of water and let it cook on a medium flame for 5-7 minutes. Stir in between.


  • Take a frying pan, grease the pan totally with oil. Spread cabbage leaves into the pan and turn on the flame.


  • When all the leaves starts to turn brown switch the flame to medium low and pour over the cooked vegetables onto the cabbage leaves.


  • Melt the butter and spread it evenly over the vegetables. This is optional.


  • Turn off the flame, Veggies in soy sauce is ready.



For Plain Rice


  • Wash rice properly until the water runs clear. Soak them for at least 15 minutes.


  • Take a large saucepan, add water to it. Bring it to a boil. For every cup of rice, use approximately 1¾ cups of water.


  • Now add 1 tsp of salt and you may add oil or butter into the water. Oil/Butter is optional.


  • Add rice to the boiling water.


  • Stir once to separate any clumps.


  • Cover the pan with a lid and let the rice cook on low flame for about 18 minutes.


  • Then remove them from the heat and allow the rice to steam in the pot for another 5 minutes.


  • Remove the lid and fluff with a fork to separate the grains.


  • Hot plain rice is ready to serve with delicious vegetables in soy sauce.


  • Serve hot and enjoy.
