Vegetable Fried Rice

Fried rice is a dish of cooked rice that has been stir-fried in a wok or a frying pan and is usually mixed with other ingredients such as eggs, vegetables, seafood, or meat.

 

Vegetable fried rice is often eaten by itself or as an accompaniment to another dish.

 

In Vegetable fried rice soy sauce is an ingredient but I tried without soy sauce and it came out so yummy.

Ingredients

  • Rice (uncooked) - 1 cup
  • Carrots (finely diced) - 1 medium
  • French Beans/Green beans (finely chopped) - 1/3 cup
  • Oil - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Mustard Seeds - 1/2 tsp
  • Onion (finely sliced) - 1
  • Red Chilli Powder - 1/4 tsp
  • Turmeric Powder - 1/3 tsp
  • Salt - to taste
  • Water (to cook rice) - 1¾ cups

Preparation

  • Wash rice properly until the water runs clear. Soak them for at least 15 minutes.

 

  • Take a large saucepan, add water to it. Bring it to a boil. For every cup of rice, use approximately 1¾ cups of water. The quantity of water also varies with the type of rice, so you might have to adjust accordingly.

 

  • Now add salt into the water and let it boil. Add rice to the boiling water.

 

  • Stir once to separate any clumps.

 

  • Cover the pan with a lid and let the rice cook on low flame for about 18 minutes.

 

  • Then remove them from heat and allow the rice to steam in the pot for another 5 minutes.

 

  • Remove the lid, fluff with a fork. Keep it aside.

 

  • Heat oil in a frying pan or a wok on a medium flame and add cumin seeds and mustard seeds into it. Let them crackle.

 

  • Then add finely sliced onions and sauté till the onions gets translucent. Stir in between.

 

  • Now add finely diced carrots and french beans and sauté for 2-3 minutes and then add salt, red chilli powder and turmeric powder. Stir in between.

 

  • Sauté them for another 5-7 minutes or till the vegetable gets cooked.

 

  • Once all the vegetables are cooked. Reduce the heat to a low flame.

 

  • Add the already cooked rice and mix well.

 

  • Once all the vegetables and rice gets mixed, check for the salt. If needed add more and mix well.

 

  • Vegetable fried rice is ready to serve.

 

  • Serve hot.
